Espresso grind

Espresso normally uses finely ground coffee to create enough resistance for pressurised water to flow through a compact coffee bed at a controlled rate.

Why so fine?

A fine grind provides high surface area and resistance to water flow. Espresso recipes use pressure and a compact coffee bed, so grind size has a major effect on flow and extraction.

Dialling in

Espresso grind adjustment is recipe-dependent. Dose, yield, time, machine characteristics and coffee all interact, so “espresso fine” should be treated as a starting range rather than a universal setting.
