Natural coffee processing
Natural processing, also called dry processing, normally dries the coffee fruit as a whole cherry before the dried fruit is removed.
Typical sequence
- Harvest and sort cherries.
- Spread whole cherries for drying.
- Turn and manage the cherries during drying to reduce mould and uneven moisture.
- Once sufficiently dry, remove the dried fruit and parchment mechanically.
- Grade and prepare the green coffee.
Flavour tendencies
Natural coffees are often associated with fruit-forward or heavier sensory characteristics, but these are tendencies rather than guarantees. Drying conditions, cultivar, climate and roasting all matter.
Processing challenges
Whole-cherry drying requires careful management. Uneven drying or excessive moisture can contribute to defects, fermentation problems or mould.
