Brewer Engineering

The engineering principles behind filter, batch and immersion brewers.

Flow control

Filter brewers rely on a controlled relationship between water delivery, bed permeability, filter resistance and drainage.

Immersion

Immersion brewers reduce dependence on continuous flow, but agitation, steep time, temperature and filtration still shape the result.

Filter materials

Paper, metal and cloth filters have different permeability and retention characteristics, affecting oils, fines and clarity.

Thermal management

The brewer must deliver water at a useful temperature and maintain an appropriate slurry temperature during extraction.

Repeatability

Good engineering aims to make the intended recipe repeatable, not to eliminate the need for adjustment.
