Brewing Science
The science connecting dose, water, grind, temperature, time, pressure and extraction.
Extraction and concentration
Extraction describes material moving from ground coffee into brewing water. Concentration describes how much dissolved material is present in the finished beverage. They are related but not identical.
Dose and brew ratio
Changing coffee mass relative to water changes beverage concentration. A ratio is a recipe parameter, not a guarantee of flavour or extraction yield.
Grind and surface area
Finer particles generally provide more surface area and can change extraction speed and flow. A grinder also produces a distribution of particle sizes rather than one perfect particle diameter.
Temperature
Higher water temperature generally increases extraction kinetics, but the useful range depends on coffee, method and recipe.
Time and flow
Longer contact can increase extraction, but flow rate and agitation also matter. Espresso adds pressure, puck structure and flow resistance to the system.
Taste as feedback
Sensory evaluation remains the final practical test. Numbers help control a recipe, but a measured extraction yield does not automatically determine whether a cup tastes good to a particular person.
