Daily cleaning
Remove coffee residues from brewing surfaces, group components, baskets, steam wands and serving equipment according to the manufacturer’s procedure.
Water treatment
Hardness and alkalinity can contribute to scale formation. Treatment should be selected using actual water characteristics rather than assuming every water supply is identical.
Calibration
Scales, grinders, thermometers and other measuring equipment can drift. Calibration and sensible checks improve repeatability.
Descaling
Descaling requirements vary by machine and water treatment system. Follow manufacturer instructions; indiscriminate descaling can be inappropriate for some equipment.
Record keeping
Commercial sites benefit from maintenance logs covering cleaning, filter changes, water treatment, servicing and faults.
