Coffee is chemically complex

Coffee contains carbohydrates, lipids, proteins, minerals, caffeine, chlorogenic acids and hundreds of volatile and non-volatile compounds. The exact composition depends on species, variety, environment, processing and roast.

Green coffee versus roasted coffee

Roasting transforms the raw material. Water is lost, sugars and amino compounds participate in reactions, acids change, gases form and new aroma compounds are generated.

What reaches the cup?

Brewing extracts only a fraction of the roasted coffee. Solubility, particle size, temperature, water composition and contact time determine which compounds move into the beverage.

Chemistry is not a flavour dictionary

A compound can contribute to aroma, taste, mouthfeel or bitterness, but perceived flavour is the result of many compounds interacting with concentration, temperature and sensory context.
