Why drying matters
After wet processing, coffee must be dried sufficiently for safe storage. Drying reduces water activity and moisture while the seed remains biologically and chemically active.
Sun drying
Patios and raised beds allow coffee to dry using solar energy and airflow. Turning frequency, layer thickness, weather and night protection all influence drying uniformity.
Mechanical drying
Mechanical dryers can provide controlled heat and airflow and are useful when weather is unreliable or throughput is high. Excessive temperature or poor airflow can damage quality or create uneven moisture.
Moisture and stability
Green coffee is commonly traded and stored within a defined moisture range, but moisture percentage alone does not describe all storage behaviour. Water activity, temperature, packaging and drying history also matter.
