Coffee Cherry Sorting
How producers sort coffee cherries before and during processing, and why ripeness and foreign-material removal matter.
Why sort cherries?
Sorting removes underripe, overripe, damaged or otherwise unsuitable fruit and foreign material. Better separation can make the subsequent process more consistent, although the available technology varies greatly between farms.
Manual and mechanical methods
Hand sorting may be performed during picking or at a receiving station. Density separation, flotation, screens, optical sorting and other mechanical systems can also be used depending on scale and process design.
Flotation
Some processing systems use water to separate fruit by density. The interpretation of floaters depends on the process and equipment; flotation is a sorting technique, not a universal test that independently proves coffee quality.
Sorting and traceability
Good lot separation helps producers keep different harvests and qualities distinct. It also supports more accurate records of processing, drying and storage.
