Coffee Yield & Productivity

Understand coffee yield from flowers and cherries to dried parchment, green coffee and roasted coffee, and why conversion ratios vary.

Several yields are possible

Yield can mean cherries per hectare, green coffee per hectare, green coffee recovered from harvested cherries, or roasted coffee after roasting. Always state the stage being measured.

Cherry-to-green conversion

Processing removes fruit and other layers, so the mass of green coffee is substantially lower than harvested cherry mass. Conversion varies by variety, ripeness, process and drying condition.

Farm productivity

Yield per hectare is influenced by planting density, variety, plant age, nutrition, rainfall, disease, pests, pruning and management. Higher yield is not automatically equivalent to better cup quality.

Roasting loss

Roasting removes water and volatile material and changes bean mass. Consequently, roasted coffee weighs less than the green coffee from which it was produced.
