Coffee Particle Size & Grind Distribution

Why grind size matters, what fines and boulders are, and why grind distribution can matter as much as the nominal setting.

Grind size controls surface area

Smaller particles expose more surface area and generally extract more readily than larger particles. This is why grind size is a primary brewing control.

Fines and boulders

Grinding produces a distribution of particle sizes. Very small particles are often called fines; unusually large particles can be described as boulders. The distribution affects flow and extraction uniformity.

Dialling in

If a coffee tastes under-extracted at a given recipe, grinding finer is a common adjustment. If flow is too slow or the coffee tastes harsh and dry, grinding coarser may help.

Grind is method-specific

There is no single universal “espresso grind” or “filter grind” particle size. Grinder geometry, coffee density and brewing equipment all affect the useful setting.
